Alabama Pecan Bread

Ingredients
  

  • 2 cups pecans, finely chopped lightly toasted if desired
  • 1 ½ cups self-rising flour or see notes for substitution
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 cup vegetable oil or melted butter
  • 4 large eggs beaten
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large bowl, mix together granulated sugar, brown sugar, beaten eggs, and oil until smooth.
  • Fold in the self-rising flour and salt until the batter is fully blended.
  • Add vanilla extract and stir to combine.
  • Stir in the chopped pecans until evenly distributed throughout the batter.
  • Pour batter into the prepared baking dish and spread evenly.
  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Let cool for at least 15 minutes before slicing into squares.

Notes

To substitute self-rising flour, use 1 ½ cups all-purpose flour plus 2 ¼ teaspoons baking powder and ⅜ teaspoon salt.
Wrap cooled squares individually and freeze for up to 3 months. For serving, top with powdered sugar, caramel, whipped cream, or vanilla ice cream.
Make mini versions using muffin tins—bake for 18–22 minutes. Store leftovers in an airtight container at room temperature for 3 days, or refrigerate for up to 5 days.
