Apple Crumb Muffins

Ingredients
  

  • ½ cup vegetable oil or melted coconut oil
  • ½ cup granulated sugar
  • ½ cup brown sugar light or dark
  • 1 large egg
  • ¾ cup buttermilk or milk + 1 tsp vinegar/lemon juice
  • 1 ¾ cups all-purpose flour
  • ½ cup chopped pecans
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • teaspoon ground cloves
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 1 ½ cups chopped apples Granny Smith, Honeycrisp, or similar
  • cup chopped pecans for topping
  • cup all-purpose flour for topping
  • 3 tablespoons unsalted butter, melted for topping
  • ¼ cup brown sugar for topping

Instructions
 

  • Preheat oven to 350°F (175°C) and line two muffin pans with paper liners for 16 muffins.
  • In a large bowl, whisk together vegetable oil, granulated sugar, and brown sugar.
  • Add the egg and buttermilk, then whisk until smooth.
  • In a separate bowl, stir together flour, chopped pecans, cinnamon, nutmeg, cloves, salt, baking powder, and chopped apples.
  • Add dry ingredients to wet ingredients and stir gently until just combined. Do not overmix.
  • Spoon the batter evenly into prepared muffin liners, filling each about 2/3 full.
  • To make the crumb topping, mix chopped pecans, flour, melted butter, and brown sugar in a small bowl until crumbly.
  • Sprinkle the crumb topping generously over each muffin.
  • Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

These muffins are best enjoyed warm. Store at room temperature for up to 3 days, or freeze individually for up to 2 months. Reheat in the oven at 300°F (150°C) for fresh flavor. Try swapping pecans with oats for a nut-free version, or add a drizzle of glaze for extra sweetness.
