  • 800 g lean ground beef (93/7 blend)
  • 4 cups cooked white rice or cauliflower rice for low-carb version
  • 1 cup frozen mixed vegetables or baby spinach
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika optional
  • ½ teaspoon ground cumin optional
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil for finishing
  • 1 tablespoon fresh lemon juice added off heat

Instructions
 

  • Cook the rice according to package instructions if it has not been prepared already. Set aside.

  • Heat a large skillet over medium heat for about one minute until hot.
  • Add the ground beef to the hot skillet and break it apart with a spatula.
  • Season the beef with garlic powder, paprika, cumin, salt, and black pepper while it cooks.
  • Cook the beef for 6–8 minutes, stirring occasionally, until browned and fully cooked.
  • Add the frozen vegetables or spinach to the skillet and cook for another 1–2 minutes until heated through.

  • Remove the skillet from the heat and stir in the lemon juice.
  • Divide the cooked rice evenly between four bowls or meal prep containers.

Notes

For a low-carb version, replace white rice with cauliflower rice to reduce net carbohydrates significantly. Ground turkey or ground chicken can replace the beef for a leaner bowl. The recipe stores well in the refrigerator for up to 4 days, making it ideal for meal prep. When reheating, add a tablespoon of water before microwaving to keep the rice soft.
