  • 3 pieces 3 egg yolks, beaten Gives richness to the filling.
  • 2 tablespoons 2 tablespoons butter Adds silkiness to the pie.
  • 1 teaspoon 1 teaspoon vanilla extract For additional flavor.

For the Topping

  • 1 cup 1 cup heavy cream For whipping.
  • ¼ cup ¼ cup powdered sugar Sweetens the whipped cream.
  • to taste Chocolate shavings or butterscotch chips For garnish.

Instructions
 

Make Butterscotch Filling

  • In a saucepan, whisk together brown sugar, cornstarch, and salt. Gradually add milk and stir over medium heat until thickened and bubbling.

Temper the Eggs

  • Slowly mix a small amount of the hot mixture into the beaten egg yolks. Return everything to the saucepan and cook for 2 more minutes, stirring constantly.

Finish & Cool

  • Remove from heat, then stir in butter and vanilla. Pour the mixture into the pre-baked pie crust and let it cool completely.

Whip the Heavy Cream

  • With a hand mixer, whip the heavy cream with powdered sugar until soft peaks form. Gently spread it over the cooled pie and garnish with chocolate shavings or butterscotch chips.

Notes

Store leftovers covered in plastic wrap or foil in the refrigerator. Let it reach room temperature before serving for best flavor.
