Caramel Apple Bark

Ingredients
  

  • 12 oz milk or dark chocolate chopped or chips
  • 1 tablespoon coconut oil or butter/vegetable oil
  • 1 cup soft baking caramels melted
  • 1 medium green apple chopped or thinly sliced
  • 1 cup gluten-free pretzels or nuts crushed; pecans, walnuts, or almonds work well
  • 0.25 cup melted chocolate for drizzle; optional
  • 1 cup water for lemon soak
  • 2 tablespoons lemon juice for soaking apple pieces

Instructions
 

  • Chop or thinly slice the green apple. Soak in a mixture of 1 cup water and 2 tablespoons lemon juice for 5–10 minutes to prevent browning. Drain and pat dry thoroughly with paper towels.
  • In a microwave-safe bowl or double boiler, melt 12 oz of chocolate with 1 tablespoon of coconut oil in 30-second bursts, stirring until smooth.
  • Line a 9×13-inch baking sheet with parchment paper. Pour the melted chocolate onto the sheet and spread to ¼ inch thickness. Tap the pan gently to release air bubbles.
  • Sprinkle crushed pretzels or chopped nuts evenly over the chocolate base.
  • Scatter the dried apple pieces across the bark, spacing them for even bites.
  • Drizzle melted caramel over the apples, then finish with an optional drizzle of melted chocolate.
  • Refrigerate the baking sheet for 1–2 hours until fully set. For extra firmness, freeze for the final 20 minutes.
  • Once set, remove from the fridge and let sit for 5 minutes. Break into rustic shards by hand or cut with a sharp knife.
  • Store in an airtight container in the fridge and enjoy within 24 hours for the best texture.

Notes

For a festive touch, sprinkle sea salt flakes before chilling. Try white chocolate for variation or add cinnamon to the caramel. Best served the same day due to fresh apple content. Store chilled and dry the apples thoroughly to avoid soggy bark.
