Ingredients
  

For the Bread

  • 1 stick butter (softened) Make sure it's at room temperature.
  • 1/3 cup white sugar
  • 2/3 cup brown sugar
  • 3 large eggs At room temperature.
  • 1/4 tsp peppermint extract
  • 1 1/3 cup all-purpose flour
  • 2/3 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp espresso powder Enhances chocolate flavor.
  • 3/4 cup milk (whole or 2%) At room temperature.
  • 1/2 cup dark chocolate chips Semi-sweet morsels.
  • pinch salt

For the Frosting

  • 2 cups powdered sugar
  • 4 tbsp milk (whole or 2%) Adjust for thickness.
  • 1/4 tsp peppermint extract
  • 1 tbsp Greek yogurt Adds creaminess.
  • 3 tbsp crushed candy canes For topping.

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • In a mixing bowl, beat softened butter with white and brown sugar until fluffy.
  • Add baking powder, baking soda, espresso powder, salt, and cocoa. Mix well.
  • Beat in the eggs and peppermint extract until the batter lightens.
  • Gradually alternate adding flour and milk, beating the batter until smooth.
  • Fold in dark chocolate chips with a rubber spatula.
  • Pour the batter into a greased loaf pan.

Baking

  • Bake for 50-60 minutes or until a toothpick comes out clean.
  • Let the bread cool completely before frosting.

Frosting

  • In a medium bowl, beat powdered sugar, milk, peppermint extract, and Greek yogurt until smooth.
  • Frost the bread and top with crushed candy canes.

Serving

  • Slice and enjoy with a cold glass of milk.

Notes

Allow leftovers to cool and store in plastic wrap or foil. Can also be frozen for later enjoyment.
