Ingredients
  

Main ingredients

  • 1 stick butter (softened) Use fresh butter for a rich flavor.
  • 1/3 cup white sugar
  • 2/3 cup brown sugar
  • 3 large eggs Use room temperature for better rise.
  • 1/4 tsp peppermint extract
  • 1 1/3 cup all-purpose flour
  • 2/3 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp espresso powder
  • 3/4 cup milk (whole or 2%)
  • 1/2 cup dark chocolate chips Creates pockets of richness in the batter.
  • pinch salt Deepens the chocolate flavor.

Frosting ingredients

  • 2 cups powdered sugar
  • 4 tbsp milk (whole or 2%)
  • 1/4 tsp peppermint extract
  • 1 tbsp Greek yogurt
  • 3 tbsp crushed candy canes For added festive crunch.

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • Add room temperature butter, brown sugar, and white sugar to a mixing bowl. Beat with an electric hand mixer until creamed together.
  • Add baking soda, baking powder, espresso powder, and cocoa powder. Mix until well blended.
  • Beat in the eggs and peppermint extract. Mix until everything is uniform.
  • Alternate adding flour and milk in increments (about three to four), beating the batter between each addition.
  • Fold in the dark chocolate chips with a rubber spatula.
  • Pour the batter into a parchment-lined or greased loaf pan and smooth the top.

Baking

  • Bake for 50-60 minutes or until a toothpick comes out clean from the center.

Frosting

  • While the bread bakes, prepare the frosting by beating powdered sugar, milk, peppermint extract, and Greek yogurt until smooth.
  • Let the bread cool completely before frosting and topping with crushed candy canes.

Notes

If you have leftovers, wrap tightly in plastic wrap and store at room temperature. Can be served with fruit salad or hot cocoa.
