Preparation

  • In a large saucepan, combine sugar, corn syrup, and water. Stir over medium heat until the sugar dissolves into a smooth, glossy mixture.
  • Increase heat to high and bring to a boil without stirring.
  • Use a candy thermometer to monitor the temperature. Once it reaches 300°F, quickly remove it from the heat.
  • Divide the mixture into separate bowls for each color if desired. Add a few drops of food coloring and flavored extract, swirling them in until vibrant ribbons of color form.

Setting the Candy

  • Pour the candy mixture onto a greased baking sheet or marble slab. Spread it out to set.
  • Allow the candy to cool completely.
  • Once cool, break the candy into pieces.
  • Dust with powdered sugar before serving.

Notes

Store Christmas Rock Candy in an airtight container lined with parchment paper to keep it fresh. Flavors may improve overnight, and it can also be used as a topping for ice cream or in baked goods.
