For the Pie Crust

  • 1 pie crust 1 pie crust You can use homemade or store-bought.

For the Filling

  • 2 cups 2 cups fresh cranberries
  • 1 cup 1 cup sugar Adjust based on the tartness of cranberries.
  • 3 large 3 large eggs Use fresh eggs for best results.
  • 1 cup 1 cup heavy cream The richer, the better!
  • 1/4 cup 1/4 cup milk
  • 1 teaspoon 1 teaspoon vanilla extract Optional: add more for extra flavor.
  • 1/4 teaspoon 1/4 teaspoon salt
  • 1/2 teaspoon 1/2 teaspoon ground cinnamon Can substitute with nutmeg for variation.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a saucepan, combine cranberries and sugar over medium heat, stirring occasionally until the cranberries burst and the mixture thickens. Remove from heat.
  • In a large bowl, whisk together eggs, heavy cream, milk, vanilla extract, salt, and cinnamon until smooth.
  • Place the pie crust in a pie dish and pour in the cranberry mixture.
  • Carefully pour the custard mixture over the cranberries.

Baking

  • Bake for 45-50 minutes, until the custard is set.
  • Allow to cool before serving.

Notes

For storing, allow to cool completely before covering lightly with plastic wrap or aluminum foil. It can last for about 3 to 4 days in the refrigerator. If desired, warm gently before serving.
