Cranberry Orange Glazed Turkey Breast

Ingredients
  

  • 10 lb turkey breast, cut into 6 pieces bone-in or boneless
  • 3 tablespoons olive oil or melted butter
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper freshly ground
  • 1 cup chicken broth
  • ½ cup orange juice concentrate or fresh orange juice
  • ½ cup cranberry juice concentrate or fresh cranberry juice
  • ½ cup orange marmalade or apricot preserves
  • 1 tablespoon fresh rosemary finely chopped
  • 2 tablespoons butter
  • ¼ teaspoon salt for glaze
  • ¼ teaspoon black pepper for glaze
  • fresh herbs, orange wedges, cranberries for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Position the oven rack in the bottom third of the oven.
  • Rinse turkey pieces and pat dry thoroughly with paper towels.
  • Rub turkey with olive oil or melted butter. Season generously with kosher salt and black pepper. Place skin-side up on a large baking sheet or roasting pan.
  • In a saucepan, combine orange juice concentrate, cranberry juice concentrate, orange marmalade, rosemary, butter, salt, and pepper. Simmer over medium heat until thickened into a glaze, about 8–10 minutes.
  • Brush the turkey pieces with a layer of glaze and place in the oven.
  • Roast, basting with glaze every 15 minutes. After 30 minutes, pour chicken broth into the pan to prevent drippings from scorching.
  • Continue roasting and glazing until the thickest part of the turkey reaches 165°F (74°C), about 1 hour 10 minutes.
  • Brush with a final layer of glaze and roast an additional 15 minutes until bubbling and glossy.
  • Remove from oven, transfer turkey to a platter, and rest for 25–30 minutes before slicing.
  • Garnish with fresh herbs, orange wedges, and cranberries. Serve with remaining glaze on the side.

Notes

For a spicier glaze, add a pinch of cayenne pepper. Add orange zest for extra citrus brightness. Mix in thyme or sage with rosemary for more herbal depth. Leftovers make delicious sandwiches with brie cheese and arugula. Store in airtight containers in the refrigerator for up to 3 days or freeze for up to 2 months.
