  • 1 unit jalapeño pepper, seeded and diced Adjust the amount of jalapeño for desired heat
  • Juice of 1 unit lime
  • 1/4 cup cilantro, chopped
  • 1-2 tablespoons honey or sugar To taste

Preparation

  • Rinse the cranberries under cool water, discarding any mushy ones.
  • Finely chop the red onion and jalapeño, removing seeds if you prefer a milder heat.
  • Squeeze juice from the lime over the chopped ingredients.
  • In a mixing bowl, combine the cranberries, onion, jalapeño, cilantro, and lime juice.
  • Add honey or sugar to taste and mix well.
  • Cover and chill in the refrigerator for at least one hour.

Notes

This salsa can be served over tortilla chips, grilled chicken, or as part of a charcuterie board. Leftover salsa keeps well in an airtight container for up to a week.
