Creamy Cucumber Salad

Ingredients
  

  • 2 large English cucumbers sliced 1/4-inch thick; peel and deseed if using garden cucumbers
  • 1 teaspoon salt for sweating the cucumbers
  • 1 cup sour cream or Greek yogurt
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper freshly ground
  • 1/2 cup red onion thinly sliced

Instructions
 

  • Wash and thinly slice the cucumbers (about 1/4-inch thick). If using garden cucumbers, peel and remove seeds.
  • Place the sliced cucumbers in a colander over a bowl. Sprinkle with salt and toss to coat. Let sit for 30 minutes to release water.
  • After 30 minutes, pat the cucumbers dry with paper towels and discard the released water.
  • In a large mixing bowl, combine sour cream, dill, vinegar, sugar, and black pepper. Whisk until smooth.

  • Add the dried cucumber slices and red onion to the bowl. Gently toss until well coated with dressing.
  • Cover and refrigerate for at least 30 minutes to let the flavors meld.
  • Before serving, give the salad a gentle stir and adjust seasoning with additional salt and pepper if needed.

Notes

Use Persian cucumbers or a mix of sour cream and mayo for variation. Avoid freezing as it affects texture and dressing. Best enjoyed within 48 hours. Store refrigerated in an airtight container.
