  • 1/4 cup 1/4 cup cornstarch Can be substituted with all-purpose flour (double the amount).
  • 1/2 teaspoon 1/2 teaspoon salt
  • 2 3/4 cups 2 3/4 cups milk Consider using half-and-half for a creamier filling.
  • 4 egg yolks 4 egg yolks, beaten Temper the egg yolks to avoid scrambling.
  • 2 tablespoons 2 tablespoons butter Fresh butter enhances the richness.
  • 1 teaspoon 1 teaspoon vanilla extract Add more for a stronger vanilla flavor.
  • 1 cup 1 cup whipped cream or meringue topping (optional) For an additional fluffy topping.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Bake the pie crust according to package instructions until golden and set aside.
  • In a medium saucepan, whisk together brown sugar, cornstarch, and salt. Gradually add milk while stirring constantly to create a smooth filling.

Cooking

  • Cook over medium heat until the mixture thickens and bubbles, noticing a lovely sheen forming on the mixture.
  • Whisk a small amount of the hot mixture into the egg yolks to temper them, then stir the yolks back into the saucepan. Stir until well combined.
  • Cook for an additional 2 minutes, stirring constantly, until the mixture thickens even further.
  • Remove from heat and stir in the butter and vanilla.
  • Pour the butterscotch filling into the prepared pie crust.
  • If using meringue, beat egg whites with sugar until stiff peaks form and spread over the filling.
  • Bake for 10-12 minutes or until the meringue is golden brown.

Cooling

  • Let the pie cool before serving to allow the filling to set properly.

Notes

Store leftovers in the refrigerator, covered to prevent drying out. The flavors deepen overnight.
