Ingredients

  • 12 ounces medium shrimp peeled, deveined, and chopped
  • 1 buttery pie crust pre-made or homemade
  • ½ cup chive-and-onion cream cheese
  • ½ cup shredded pepper Jack cheese plus extra for topping
  • 4 large eggs
  • ½ cup heavy cream or whole milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • teaspoon cayenne pepper optional, for heat
  • 1 teaspoon salt divided
  • ½ teaspoon black pepper
  • 1 teaspoon lemon zest optional, for brightness

Instructions

  • Preheat oven to 375°F (190°C). If using a frozen pie crust, let it thaw for 10-15 minutes.
  • Prick the bottom and sides of the pie crust with a fork. Pre-bake for 9-11 minutes until lightly golden. Set aside.
  • Peel, devein, and chop the shrimp into bite-sized pieces. Heat a skillet with a teaspoon of olive oil or butter over medium heat.
  • Sauté the shrimp for 2-3 minutes until pink and opaque. Season with salt, black pepper, paprika, and garlic powder. Set aside.
  • In a large bowl, beat the chive-and-onion cream cheese until smooth.
  • Add eggs one at a time, whisking well after each addition. Stir in pepper Jack cheese, heavy cream (or milk), onion powder, cayenne pepper, and lemon zest if using.
  • Fold the cooked shrimp into the egg mixture until evenly distributed.
  • Pour the filling into the pre-baked pie crust. Smooth the top and sprinkle extra shredded cheese over the surface.
  • Bake for 30-35 minutes until the center is set and the top is golden.
  • Cool for 10-15 minutes before slicing and serving.

Notes

For a spicier version, add a teaspoon of Cajun seasoning or hot sauce to the shrimp while cooking. To make gluten-free, use a gluten-free pie crust and verify all seasonings are certified gluten-free. Serve with citrus salad, roasted veggies, or cornbread for a complete meal.
