For the Brownies

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts optional
  • 1/2 cup chocolate chips optional

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  • In a large bowl, melt the butter and mix in both sugars until well combined, stirring until the mixture looks glossy.
  • Add the eggs one at a time, stirring after each addition. Then, mix in the vanilla extract.

Mixing Dry Ingredients

  • In another bowl, whisk together the flour, cocoa powder, spices, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the nuts and chocolate chips if using.

Baking

  • Pour the batter into the prepared baking pan and smooth the top.
  • Bake for about 25-30 minutes, until a toothpick inserted in the center comes out with moist crumbs attached.
  • Let cool in the pan before cutting into squares and serving.

Notes

Store in an airtight container for up to a week. For a dairy-free version, substitute butter with coconut oil.
