Ingredients
  

Dry Ingredients

  • 2 1/4 cups All-purpose flour (spooned and leveled)
  • 2 tsp Baking soda
  • 1/4 tsp Salt
  • 2 tsp Ground ginger
  • 1 tsp Cinnamon
  • 1/4 tsp Ground clove
  • 1 tbsp Espresso powder

Wet Ingredients

  • 1 1/2 sticks Unsalted butter (softened)
  • 3/4 cup Brown Sugar (dark or light)
  • 1/4 cup White granulated sugar
  • 1 Large egg (room temperature)
  • 2 tsp Vanilla extract
  • 1/4 cup Molasses Can be substituted with dark corn syrup or honey.

For Rolling and Glazing

  • 1 1/2 cups Powdered sugar (sifted)
  • 1/4 tsp Ground cinnamon
  • 2 tbsp Espresso or strong coffee Adjust as needed for glaze.
  • White granulated sugar for rolling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and espresso powder.
  • In another large bowl, cream the softened butter, brown sugar, and granulated sugar together on medium speed until the mixture is light and fluffy.
  • Beat in the eggs, vanilla extract, and molasses to the butter-sugar mixture until everything is combined.
  • Gradually add the flour mixture to the wet ingredients, stirring gently until combined.
  • Scoop out the dough with a tablespoon, rolling each scoop into a ball. Roll each ball in the white granulated sugar to coat.
  • Place the sugar-coated dough balls on baking sheets lined with parchment paper.

Baking

  • Bake for 10-12 minutes, until the edges begin to turn golden brown.
  • Once baked, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Glazing

  • While the cookies cool, whisk together the powdered sugar, ground cinnamon, and espresso or strong coffee to form a glaze.
  • Drizzle or dip the cooled cookies in the coffee glaze.

Notes

Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for later enjoyment. Variations include adding mini chocolate chips or crushed nuts on top of the glaze.
