  • 1/2 cup unsalted butter (melted for richness)
  • 1 cup molasses (for that dark, rich sweetness)
  • 1 cup hot water (to make the batter light and fluffy)
  • 1 large egg (for binding)

Preparation

  • Start by preheating your oven to 350°F (175°C).
  • In a large mixing bowl, combine the sifted flour, brown sugar, baking powder, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt. Whisk these together until they form a light, fluffy mix.
  • Pour in the melted butter and molasses, stirring well to incorporate.
  • Beat in the egg until smoothly blended.
  • Gradually add the hot water, mixing until the batter is smooth and well combined.

Baking

  • Pour the batter into a greased baking dish, spreading it evenly.
  • Bake in your preheated oven for about 30 to 35 minutes, until the edges are golden and a toothpick inserted in the center comes out clean.
  • Allow the cake to cool for at least 20 minutes before serving.

Notes

Consider serving warm with vanilla ice cream or whipped cream. You can store leftovers in the fridge for up to three days. The cake can be made ahead of time and tastes even better the next day.
