  • 1/4 cup unsalted butter, melted and slightly cooled Allow to cool to avoid cooking the egg whites.
  • 1 cup powdered sugar (for frosting)

Preparation

  • Preheat your oven to 350°F. Arrange two 9-inch round cake pans on your counter. Lightly grease them and line with parchment paper.
  • In a medium bowl, whisk together the cake flour, baking powder, and granulated sugar until well combined.

Whipping Egg Whites

  • In a clean bowl, beat the egg whites on medium-high speed until they form stiff, glossy peaks, which should take about 3-4 minutes.

Combine Wet and Dry Ingredients

  • In another bowl, mix the milk, melted butter, and vanilla extract. Once combined, gently pour this mixture into the dry ingredients.
  • Stir together just until smooth, being careful not to overmix.

Folding Egg Whites

  • Gently fold in one-third of the whipped egg whites into the batter, then slowly fold in the remaining egg whites in two parts, being careful not to deflate.

Baking

  • Divide the batter into the prepared pans and bake for 25-30 minutes until golden and a toothpick comes out clean.
  • Let the cakes cool completely in the pans before removing.

Serving

  • Dust the top with powdered sugar, serve with whipped cream and fresh berries, and enjoy.

Notes

Store leftovers in an airtight container at room temperature for up to three days or refrigerate for better freshness. The flavors deepen overnight.
