Ingredients
  

For the crust

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened Use fresh butter for the best flavor.
  • 1/4 cup powdered sugar

For the filling

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lime juice Fresh lime juice is recommended for the best flavor.
  • 2 teaspoons lime zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting For serving.

Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking dish.
  • In a bowl, mix the flour, softened butter, and powdered sugar until crumbly. Press this mixture into the bottom of the baking dish.
  • Bake for 15-20 minutes, until lightly golden.
  • In another bowl, whisk together the eggs, granulated sugar, lime juice, lime zest, and baking powder until smooth.
  • Pour the lime mixture over the baked crust and spread evenly.
  • Bake for an additional 20-25 minutes or until set.
  • Cool completely, then dust with powdered sugar before serving.

Notes

Store Lime Bars in an airtight container in the fridge for up to a week. The flavors improve overnight.
