  • 460 g heavy cream Adds richness to the cheesecake.
  • 1 teaspoon salt Enhances flavor.
  • 1 teaspoon vanilla extract Contributes warmth to the flavor.
  • 2 tablespoons matcha powder Use high-quality for best results.
  • 50 g all-purpose flour Helps to stabilize the cheesecake.

For the whipped cream

  • 300 g whipping cream or heavy cream Can be subbed with the same as for the cheesecake.
  • 3 tablespoons powdered sugar For sweetening the whipped cream.
  • 1 teaspoon vanilla extract For a hint of flavor.

Optional garnish

  • to taste thyme Adds a touch of freshness if desired.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and prepare your cake pan by lining it with parchment paper.
  • In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth.
  • Gradually add in the granulated sugar, mixing until well combined.
  • Add eggs one at a time, ensuring each is incorporated before adding the next.
  • Mix in the heavy cream, salt, vanilla, matcha powder, and flour until smooth and uniform.

Baking

  • Pour the batter into the prepared cake pan, smoothing the top.
  • Bake until the top is caramelized and darkened, approximately 45 minutes.
  • Let the cheesecake cool in the pan, then transfer to a wire rack to cool completely.

Whipping cream

  • In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

Serving

  • Serve each slice topped with a dollop of whipped cream and garnish with thyme if desired.

Notes

Store leftovers covered in plastic wrap or in an airtight container in the refrigerator. The flavors improve overnight.
