Ingredients
  

  • 1 ¾ cups all-purpose flour swap with 1:1 gluten-free blend for GF version
  • ½ cup black cocoa powder or dark cocoa powder
  • 1 teaspoon baking soda
  • 2 teaspoons cornstarch for soft, chewy centers
  • ½ teaspoon salt
  • ¾ cup unsalted butter, melted or vegan butter
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon mint extract optional
  • ¾ cup dark chocolate chips or semi-sweet/white chocolate
  • ¾ cup mint chocolate chunks like Andes mints or creme de menthe chips
  • ½ cup green sugar pearls
  • 48 candy eyes assorted sizes

Instructions
 

  • Preheat oven to 325°F (163°C) and line baking sheets with parchment or silicone mats.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, cornstarch, and salt.
  • In a large bowl, beat melted butter, granulated sugar, and brown sugar until fluffy.
  • Add eggs, vanilla extract, and optional mint extract. Mix until well combined.
  • Slowly add the dry ingredients to the wet, mixing just until combined.
  • Fold in chocolate chips and mint chocolate chunks.
  • Cover dough and chill for 30 minutes, or freeze for 15 minutes if short on time.
  • Scoop dough into balls (2–3 tbsp each), press candy eyes and sugar pearls on top.
  • Freeze decorated cookie balls for 10 minutes to prevent spreading.
  • Bake for 12–14 minutes, until edges are set but centers still look soft.
  • Cool on baking sheet for 5 minutes, then transfer to a wire rack to finish cooling.

Notes

To make them even spookier, use various sizes of candy eyes or drizzle with neon green icing. Cookies stay fresh at room temp for up to 5 days, in the fridge for a week, or in the freezer for 3 months. Freeze shaped dough and bake straight from frozen, adding 2–3 minutes to baking time. For a TikTok-worthy version, stack multiple eyes on each cookie.
