  • 2 large large egg whites Fresh egg whites are best for stability.
  • teaspoon salt
  • teaspoon cream of tartar Can be substituted with lemon juice or white vinegar.
  • ½ cup sugar
  • 2 pieces peppermint candy canes (crushed) Add as a festive touch.

Preparation

  • Preheat your oven to 225°F.
  • In a mixing bowl, beat the egg whites until they become foamy.
  • Sprinkle in the salt and cream of tartar, continuing to beat until soft peaks form.
  • Gradually add the sugar while beating the mixture. Watch it transform into stiff, glossy peaks; this takes about 7 to 8 minutes.
  • Drop the mixture by teaspoonfuls onto ungreased, foil-lined baking sheets.
  • Generously sprinkle the crushed candy canes atop each mound.

Baking

  • Bake at 225°F for 90 minutes to ensure the meringues dry out.
  • Once the baking time is up, turn off the oven and leave the cookies inside with the door slightly ajar for at least an hour to cool.

Storage

  • Store meringues in an airtight container to keep fresh.

Notes

These meringues can also be flavored with vanilla or different kinds of crushed candy for variation.
