Pineapple Casserole

Ingredients
  

  • 1 can pineapple chunks 20 oz, drained (or 2 cups fresh pineapple, chopped)
  • 1 cup sharp cheddar cheese grated
  • ½ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 sleeve Ritz crackers crushed (about 30 crackers)
  • 4 tablespoons unsalted butter melted

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease an 8x8 or 9x13-inch baking dish.
  • Drain the canned pineapple thoroughly or prepare fresh pineapple chunks.
  • In a mixing bowl, combine the pineapple, grated cheddar cheese, granulated sugar, and flour. Stir until well mixed.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • In a separate bowl, mix the crushed Ritz crackers with the melted butter until evenly coated.
  • Sprinkle the cracker mixture evenly over the pineapple-cheese filling.
  • Bake for 25–30 minutes, or until the top is golden brown and the filling is bubbling.
  • Let rest for 5 minutes before serving.

Notes

For a heartier variation, add 1 cup diced ham to the filling. Use gluten-free crackers and dairy-free cheese for allergen-friendly versions. Add a pinch of cinnamon or nutmeg for a warm spice note.
