Ingredients
  

For the Pumpkin Butter

  • 6 cups pumpkin puree (fresh or canned) Fresh pumpkin gives a thicker texture.
  • 4 cups sugar Granulated sugar is recommended for best texture.
  • 2 tablespoons cinnamon Adds warm flavor.
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1 pinch salt
  • Optional vanilla For added aroma.

Preparation

  • Prepare your canner, jars, and lids. Bring a large pot of water to a boil and submerge the jars and lids for about ten minutes.
  • In a large saucepan, warm the pumpkin puree over medium heat until heated through.
  • Add the sugar and spices to the pumpkin puree, stirring well until fully combined.
  • Simmer the mixture for 30 minutes, stirring constantly to prevent sticking.
  • Fill the hot jars with the hot pumpkin butter, leaving a 1/4 inch head space.
  • Tap the jar gently to settle the mixture and run a clean damp towel around the rim to remove residue.
  • Place the warmed canning lid on the jar and tighten the band to fingertip tight.
  • In the canner, ensure jars are covered with water by about two inches. Bring to a boil and process for 1 hour.
  • If pressure canning, process at 10 pounds of pressure for 30 minutes.
  • Remove the canner lid and allow jars to sit for 5 minutes before taking them out.
  • Cool jars with space in between for a few hours till room temperature.
  • After 24 hours, check the seals; lids should not give when pressed.

Notes

Store sealed jars in a cool, dark place. Once opened, refrigerate and consume within two weeks. For variations, consider adding orange zest or apple cider vinegar.
