Ingredients

  • 2 quarts popped popcorn about 175 g; air-popped, stovetop, or plain microwave
  • 3 tablespoons unsalted butter can substitute coconut oil for dairy-free
  • ¼ cup granulated sugar or use brown sugar for caramel flavor
  • 1 tablespoon water
  • ¼ teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon pumpkin pie spice or a mix of cinnamon, nutmeg, ginger, and cloves

Instructions

  • Preheat the oven to 300°F (150°C) and line a baking tray with parchment paper.
  • Place the popped popcorn in a large mixing bowl.
  • In a small saucepan, combine butter, sugar, water, vanilla, salt, and pumpkin pie spice. Heat gently, stirring constantly, until the butter melts and the sugar dissolves into a smooth mixture.
  • Pour the hot spiced butter mixture over the popcorn. Toss well until evenly coated.
  • Spread the coated popcorn on the prepared tray. Bake for 10–15 minutes, stirring every 3–4 minutes.
  • Remove from the oven and stir occasionally as it cools to help it crisp up. Enjoy immediately or store in an airtight container.

Notes

For variations, try adding pecans, dried cranberries, or a white chocolate drizzle. For Halloween, mix in candy eyeballs or sprinkles. For Christmas, add peppermint or dark chocolate. Store cooled popcorn in a sealed container for up to 1 week.
