Strawberry Macaron Shells

Ingredients
  

For the Macaron Shells

  • 100 g egg whites (aged if possible)
  • 100 g white granulated sugar
  • 105 g almond flour (finely sifted)
  • 100 g powdered sugar
  • 5 g freeze-dried strawberry powder
  • 1 drop fuchsia gel food coloring (optional)

For the Filling

  • 4 tbsp unsalted butter, softened (56 g)
  • 1.5 cups confectioners’ sugar, sifted (187.5 g)
  • 1/3 cup freeze-dried strawberry powder (30 g)
  • 2-4 tbsp milk or water (as needed) To reach desired consistency.
  • 56 g white chocolate For drizzling
  • 5 g powdered freeze-dried strawberries For garnish

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper or a silicon mat.
  • Gather your mixing bowls, spatula, and piping bags.

Preparing the Meringue

  • In a bowl, sift together the almond flour and powdered sugar.
  • In a stand mixer, whip the aged egg whites until frothy. Gradually add the granulated sugar while whisking.
  • Continue whipping until you achieve stiff peaks, about 5 minutes.

Making the Macaron Shells

  • Gently fold the sifted almond flour and powdered sugar mixture into the meringue.
  • Transfer the batter to a piping bag fitted with a round tip.
  • Pipe little rounds onto the prepared baking sheet, leaving about an inch between them.
  • Let the macaron shells sit at room temperature for 30 to 60 minutes.
  • Bake the macarons for about 15-20 minutes, or until they are slightly golden on the edges.

Making the Filling

  • While the shells are baking, whip the softened unsalted butter until fluffy.
  • Sift in the confectioners’ sugar and freeze-dried strawberry powder. Add milk or water to achieve desired consistency.

Assembly

  • Once the macarons are cool, pipe the filling onto the flat side of one shell and place another shell on top.
  • Melt the white chocolate and drizzle it over the assembled macarons.
  • Finish with a sprinkle of powdered freeze-dried strawberries.

Notes

If almond flour is hard to find, substitute with finely ground pistachios. Clean the kitchen while waiting for the macaron shells to set for an organized process.
