Ingredients
  

For the cookie cups

  • 3/4 cup salted butter (softened) Make sure it's at room temperature.
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract Consider adding extra for more flavor.
  • 1/2 teaspoon almond extract Can be swapped for lemon or orange zest for a variation.
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Sprinkles To make it festive.

For the frosting

  • 2 ounces cream cheese (softened)
  • 3 cups powdered sugar
  • 1/4 cup butter Softened to room temperature.
  • 2 tablespoons milk Add more if needed to adjust consistency.
  • 1/4 teaspoon vanilla extract
  • Pink or red food coloring gel Optional, for decoration.

Instructions
 

Preparation

  • Preheat your oven to 350 degrees F and grease two regular muffin pans with nonstick cooking spray.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about a few minutes.
  • Add in the egg, vanilla extract, and almond extract. Beat again until the mixture is smooth and creamy.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, and baking soda.
  • Carefully add the flour mixture to the wet ingredients and mix just until a soft dough has formed.
  • Take about 2 tablespoons of the cookie dough and press it into the bottom of each cup in your greased muffin pan.

Baking

  • Bake the cookie cups for about 12 minutes and let them cool for at least 15 minutes in the pan.
  • Press the back of a tablespoon or the top of a round spice jar down into the center to create that perfect cup shape.
  • Let them cool completely before decorating.

Frosting Preparation

  • In a medium bowl, beat together the softened cream cheese and butter using an electric hand mixer until smooth and creamy.
  • Add in the powdered sugar, vanilla extract, and milk, mixing until combined.
  • Once you reach the desired frosting consistency, you can add a touch of food coloring gel if desired.
  • Transfer the frosting to a piping bag with a star tip to swirl into each cookie cup, or use a spoon for a rustic look.

Notes

Store leftovers in an airtight container at room temperature for a couple of days or in the refrigerator for a week. Can be frozen for a longer shelf life.
