Ingredients
  

Truffle Base

  • 1 box Thin Mints cookies Crushed into fine crumbs
  • 8 ounces cream cheese Softened for easy blending

Chocolate Coating

  • 1 cup chocolate chips For coating the truffles
  • 1 cup candy coating Optional, for a different finish

Optional Toppings

  • 1 tablespoon crushed nuts For added crunch
  • 1 teaspoon peppermint extract For enhanced mint flavor

Preparation

  • Crush the Thin Mints cookies in a food processor until fine.
  • Add the softened cream cheese, blending until the mixture forms a soft dough.
  • Scoop tablespoon-sized portions of the mixture and roll into balls.
  • Place the truffles on a parchment-lined baking sheet and freeze for 15 minutes.

Chocolate Coating

  • Melt the chocolate chips and candy coating in the microwave, stirring every 30 seconds until smooth.
  • Dip each chilled truffle into the melted chocolate, letting the excess drip off.
  • Place back on the parchment paper and add any desired toppings.
  • Refrigerate the truffles until set, about 15 minutes.

Notes

Keep truffles stored in an airtight container in the refrigerator for up to five days. For best flavor, allow to sit overnight before enjoying.
