Ingredients
  

For the Cake

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Frosting

  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and line a 15x10 inch jelly roll pan with parchment paper.
  • In a bowl, beat together the eggs and sugar until they are thick and pale.
  • Add the melted butter and vanilla extract, mixing well to combine.
  • Sift together the flour, baking powder, and salt. Gently fold this mixture into the egg mixture until smooth.
  • Pour the batter into the prepared pan and spread it evenly.
  • Bake for 12-15 minutes until the cake is lightly golden.
  • Prepare a clean kitchen towel and sprinkle it with powdered sugar.

Cooling and Rolling

  • When the cake is done, invert it onto the towel, peel off the parchment, and roll it up with the towel inside. Let it cool completely.

Frosting and Assembly

  • For the frosting, whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla.
  • Once the cake is cooled, unroll it and spread the buttercream evenly across the surface.
  • Roll the cake back up without the towel and wrap it in plastic wrap. Refrigerate until it is set.
  • Slice and serve. Enjoy!

Notes

Store any leftover cake roll in the refrigerator wrapped tightly in plastic wrap to keep it fresh. Best enjoyed within a few days, but can last up to a week.
