Watergate Fluff Salad (Pistachio Pineapple Fluff Delight)

A light, creamy, nutty, and fruity retro dessert made with pistachio pudding, Cool Whip, crushed pineapple, marshmallows, and walnuts. Quick, nostalgic, and always a crowd-pleaser!

Ingredients
  

  • 1 box (3.4 oz) instant pistachio pudding mix can substitute vanilla pudding + ½ cup finely chopped pistachios
  • 1 can (20 oz) crushed pineapple in juice do not drain
  • 1 container (8 oz) Cool Whip or 1 cup homemade whipped cream
  • 2 cups mini marshmallows pastel marshmallows for color if desired
  • 1 cup chopped walnuts or pecans; substitute toasted coconut for nut-free option

Instructions
 

  • In a large bowl, mix the pistachio pudding mix with the crushed pineapple (including juice) until thickened and green.
  • Gently fold in the Cool Whip until smooth and fluffy.
  • Stir in mini marshmallows and chopped walnuts until evenly combined.
  • Cover and refrigerate for at least 30 minutes to let flavors meld and marshmallows soften.
  • Serve chilled, topped with extra nuts or a maraschino cherry if desired.

Notes

For fun variations, stir in maraschino cherries, shredded coconut, or mini chocolate chips. Use red and green marshmallows for Christmas or pastel marshmallows for Easter. Best served fresh, but can be stored covered in the refrigerator for up to 3 days.
